Our dehydrated beef stroganoff recipe only needs a handful of simple ingredients that you can easily dehydrate yourself. It tastes great and can be ready to eat in 30 minutes or less with our simple three-step process once you get to camp.

With just a little bit of pre-planning, the dry ingredients needed for several of these dehydrated camping meals can all be made in as little as 2 or 3 days.  But a better plan would be to spend more time preparing and dehydrating ingredients in bulk for the long-term as we suggest here on the Dehydrator Chef website.

We suggest you make this recipe at home several times before you head out to the field so you can dial it into your personal preferences. Adjusting proteins, carbohydrates, and spices as you see fit.  

We use the easy-to-find McCormick Beef Stroganoff seasoning packets. Some pre-made seasoning mixes tend to burn. I haven’t found that to be the case with the McCormick Beef Stroganoff seasoning packets. However, feel free to use the seasoning mix that is available locally. Just be sure to test it several times at home, where you can easily correct any cooking mishaps.

This is the Beef Stroganoff seasoning mix we use. You should be able to find this at the local grocer. If not, you can get some from Amazon. If using a different brand, you may need to increase or decrease the seasoning mix in the recipe.

We have dehydrated and powdered containers of store-bought sour cream before. We’re using Hoosier Hill Farm sour cream powder in our dehydrated beef stroganoff recipe. It’s a good product and a real timesaver. You can’t make dehydrated beef stroganoff without having sour cream powder. We picked up this 1-pound container for under $14.00.

At-Home Preparation

Combine all the dry ingredients into a single food-safe 1-quart quality name-brand zip-top bag for the best storage results. The sharp edges of dehydrated ingredients will likely cause micro-punctures in lesser-quality thinly-walled zip-top plastic bags.

Wrapping the inner zip-top bag with a few heavy-duty paper towels before placing it in the outer zip-top bag helps to guard against micro-punctures that may cause leaks and water penetration. This way, the food packets remain viable in the field or pantry storage.

Empty the dry mix contents of the zip-top bag into a suitable-sized cooking pot.

We added enough water to cover the dry ingredients, and then a tad bit more. Then we gave it all a good stir to get everything mixed and saturated with water.

Measure in enough water to cover the dry ingredients. Then add a tad bit more water. Stir to mix thoroughly. Cover, and let the dry ingredients hydrate for a minimum of five minutes. Stir several times, and add more water if needed to keep all ingredients covered and well-saturated with water.

You’ll notice that the dry mix starts to soften and rehydrate in the water bath.

So why not add all of the water at once?  You certainly can, but we are metering in the water, so we don’t end up with a too-dry or soupy final product.  Adding water in smaller amounts works best for our Dehydrator Chef recipes.

The beef stroganoff has just started to boil. So we turned down the heat to a simmer. We’re also stirring frequently so nothing burns.

Bring the hydrating mix to a boil on your cooking stove, stirring occasionally to mix. Be sure to stir the contents all the way to the bottom of the cooking pot.

Next, adjust the stove to a low-heat simmer for approximately two minutes. Stir frequently to reduce the chances of burning.

    50 grams dehydrated ground beef crumbles, 40 grams dehydrated noodles, 6 grams dehydrated peas, 6 grams dehydrated carrots, 10 grams dehydrated onion, 1 tablespoon McCormick Beef Stroganoff Sauce seasoning mix, 40 grams Hoosier Hill sour cream powder, 1 teaspoon dehydrated parsley, 1/2 teaspoon kosher salt, 3 grams dehydrated jalapeno pepper slices
  • Store the leak-proof container of cooking oil with your camp kitchen spices and condiment packets.

Packaging

  • Wrap the zip-top bag with a heavy-duty paper towel to help guard against punctures, leaks, and water penetration due to the sharp edges of the dehydrated ingredients and to protect the food's integrity. This way, it remains viable in the field or pantry storage.

In the Field Preparation

  • Add enough water to cover the dry ingredients. Then add a tad bit more water. Stir to mix thoroughly. Cover, and let the dry ingredients hydrate for a minimum of five minutes.
  • Next, on your cooking stove and over medium flame, bring the hydrating mix to a boil, frequently stirring to mix. After coming to a boil, turn the flame down to a simmer to reduce the chance of burning.
  • After two or more minutes of simmering and stirring, turn off the stove and move the pot into an insulated wrap or cozy to rest, hydrate, and steam for 15 to 20 minutes or more for the flavors to blend and the ingredients to fully reconstitute.
  • If desired, add a bit of the healthy cooking oil from the leak-proof container. Stir to combine.
